The History of Recipes
Written recipes as a concept can be traced back into ancient history, in fact as far as the Egyptians, and quite possibly further than that. Interesting though that is, these, old cook books were just very basic hieroglyphic or cunieform recipes for meal preparation.
Much later, in Roman times a man called Apicius created some scripts showing how to cook the recipes prepared by wealthy roman citizens. In his works, Apicius recounts how the meals of wealthy Romans were separated into appetizers, entrees and afters, a style of dining still practiced today. Additionally, he describes how the cooks of Roman times were skilled in the use of a good variety of herbs and spices, including some familiar names such as thyme, fennel and asafoetida. Later on, in the 15th century, knights returning from the crusades brought back many new foods, spices and herbs from the Middle-East, including spices like coriander, parsley, and basil. The introduction of these new culinary ideas created a surge in manuscripts on cooking, many of which are now in private collections. When we get to the twentieth century, cooking publications were starting to become popular due to increased literacy, people having increased free time and having more money. |
